水仙烏龍茶 = Water Sprite Black Dragon Tea
Shui Xian translates to water sprite and WuLong or Oolong means Black Dragon yielding a richly evocative image of magic in every cup. This cultivar is grown high in the Wuyi mountains in the southern Chinese province of Fujian. Many of the tea gardens are nestled in rock gullies and protected by the mountains. Lush with abundant rainfall, the tasting notes reflect the unique terroir of the region.
Oolong tea is a medium oxidized tea yielding a flavor characteristic of both green and black teas. The fresh leaves are withered for one to two days and the leaves are then rolled to release enzymes needed for the next step. Then the tea leaves are allowed to oxidize, although for a shorter period than for black tea, and the process is stopped before it is completed. The tea is fired to halt further oxidation and to dry the tea. The elegant twisted leaf style provides greater surface area for a delicious first and second steep which is why we love to steep it in a teapot so the leaves have room to expand.
This tea is enjoyed in Chinese restaurants across the globe as it is the perfect sipping tea for any meal.

When I began making Kombucha, I told my Naturopath I was using black or green tea for brewing Kombucha. He suggested I try Oolong Tea as it tastes like black & green tea. It would be the best of both worlds! I have used many Oolong Teas over the years which I liked. I LIKED but Se Chung Special Oolong Tea I LOVE! I currently have 2 brews going- Se Chung Special Oolong and Se Chung with Yerba Mate tistane. I have found by reducing the amount of Yerba Mate it brews with Camelllia sinensis teas. I put a stick of cinnamon in a bottle of my last brewed KT (Se Chung & White Peony) then let it sit in the refrigerator for a few days. It was delicate, delicious and breathtaking! Prepared any way Se Chung Special Oolong is the Oolong to LOVE!!

I’ve tired several different teas for my Kombucha. Some from KK and some from other places. I must say this oolong is my favorite of all. To me it makes a smooth Kombucha with an excellent flavor. Really delicious! I really love the strong (bold) flavor. It’s a great tea to have with eggs and toast, too! Yummy! I will definitely order this again! Highly recommend. I get about two brews from each pot I make. I also like to mix this with other teas I have to create my own "special blend." 🙂
